is an extremely lean, cylindrical cut from the cow's hind leg. Because it is a heavily used muscle, it is dense and tough with very low marbling. However, it offers a robust, beefy flavor and is highly economical when cooked and sliced properly across the grain and very thinly to ensure it isn't chewy.
